Apple Spice Pancakes

Not only do these taste great, but they also make the kitchen smell great! This recipe contains coconut milk, so it is great for those that are lactose intolerant. However, it can be replaced with regular milk.

Ingredients

1 apple peeled and cored
1 1/2 cups of coconut milk or regular milk
2 eggs
1/2 cup of brown sugar
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of allspice
2 cups of flour

Technique

Slice the apple and combine with coconut milk or regular milk in a blender. Blend to desired consistency. Pour into medium size mixing bowl. Add eggs, brown sugar, baking powder, baking soda, cinnamon and all spice. Whisk together until well mixed. Add flour a cup at a time. Do not over mix or it will result in tough pancakes. Test griddle/skillet with a drop of water. If it sizzles, it is hot enough. Ladle onto your griddle or hot skillet. Wait for little bubbles to appear on pancakes. Check the underside and then flip. Remove once the second side is golden brown. Garnish with fresh apples, cinnamon and sugar, or powder sugar.
