This is a simple and healthier alternative to the classic chicken parmesan. If you do not have fresh mozzarella cheese, use the prepackaged kind. Serve with a side of pasta and round it out with Sautéed Spinach with Garlic or a salad and it will be a family favorite or can feed a crowd. If you are making the Easy Marinara Sauce, you will need to add an extra time to allow the sauce to simmer.
1 lb. of chicken scaloppini, or thinly sliced chicken – 4 pieces
½ cup of fine bread crumbs seasoned if desired or panko bread crumbs
½ cup of parmesan cheese
¼ cup of toasted wheat germ (Optional, but is a great source of many vitamins.)
½ cup of Egg Beaters or 1 – 2 eggs beaten
½ cup of Easy Marinara Sauce or your favorite marinara sauce
4 oz. of fresh mozzarella cheese cut into 4 thin slices
Make Easy Marinara Sauce if using. Mix bread crumbs, cheese and wheat germ. Dip chicken into the egg mixture, then into dry mixture and place on a baking sheet sprayed with non-stick cooking spray or lined with foil. Bake in a preheated oven at 400 degrees for about 15 minutes. Cooking time will vary depending on size and thickness of chicken. Remove from oven and spread about 1 – 2 tablespoons of marinara sauce over chicken and place a slice of mozzarella cheese on each piece of chicken. Place back into oven and cook for 3 minutes or until cheese is melted. Serve family style or plated and enjoy!
