Baked Feta Cheese with Mixed Peppers

What a colorful and easy appetizer that can feed a crowd! I like to serve this with Baked Pita Chips or you can choose the store bought type.

Ingredients

2 tablespoon of olive oil
1 small shallot finely diced
1/2 of a red bell pepper finely diced
1/2 of a yellow bell pepper finely diced
1/2 of an orange bell pepper finely diced
1 tablespoon of Zatar seasoning
1 – 16 oz. piece of feta cheese – this is the hard kind vs. the soft kind
Non-stick cooking spray
Pita chips
1 bag of pita bread, each pita cut into 8 pie shaped pieces

Technique

In a medium sized mixing bowl, combine all peppers, shallot, oil and zatar seasoning. Mix and set aside. Spray a medium sized baking dish with non-stick cooking spray. Crumble feta into the baking dish and spread pepper mixture over top. Place baking dish into a preheated oven at 375 degrees for 25 – 30 minutes or until cheese begins to brown. Remove and serve with pita chips.

For pita chips, cut each pita into 8 pie shaped pieces, place onto a cookie sheet and bake in a preheated oven for 8 – 10 minutes or until crunchy.
