Herbs de Provence adds a wonderful flavor to most any dish and in particular this type of potato. Bake until fork tender for a simple and delicious side dish. If there are any leftovers try making Breakfast Potatoes.
1 1/2 lb. of new potatoes, scrubbed and dried
1/4 cup of olive oil
2 tablespoons of Herbs de Provence
1 cipollini onion thinly sliced or a large shallot
1 teaspoon of kosher salt
Place all ingredients into a large baking dish. Toss until evenly coated. Cover and bake in a preheated oven at 375 degrees for about an hour or until fork tender. Serve as is, or top with a dollop of Greek yogurt, sour cream and/or butter.
