A rustic side dish that is easy to make using simple and fresh ingredients.
4 medium potatoes peeled and cut into 1/2″ slices
8 medium carrots peeled and cut into 1/2″ slices
1/4 cup of olive oil
2 cloves of garlic minced
1 tablespoon of fresh rosemarystem removed and minced
1 tablespoon of fresh thyme stem removed
Parmesan cheese for garnish
In a medium to large casserole dish add all ingredients and mix well. Bake at 375 degrees for 1 hour or until vegetables are tender. Garnish with parmesan cheese and serve.
