Breakfast

In our crazy busy lives getting out the door in the morning seems to take an act of God or at least at my house it seems that way.  Sometimes in our mad dash breakfast is a grab and run with food items such as cereal in a bag or a breakfast bar of some sort.  However, I have a few tricks that seem to work for eating a better breakfast – after all it is said to be the most important meal of the day.  Meal as it may I still have a tough time getting what might be considered a meal on the table for my family, mainly my kids – hubby generally fends for himself and is quite happy with the situation.  Some of my “go to” recipes include muffins made from Alice’s Banana Bread or Grandma Helen’s Pumpkin Bread, freeze them and the night before take out a couple to thaw overnight and breakfast is ready as we grab it and run out the door.   Another great option is making Maggie’s Buttermilk Pancakes over the weekend and freezing them.  The night before take out how many you will need, pop in the microwave for a few seconds the next morning, drizzle with syrup, add fruit and breakfast is done in less than 5 minutes!

Quiche is another great option that can be made ahead and all you have to do is heat and eat!  If possible make 2 quiches at a time, 1 for lunch or dinner and save the second one for breakfast or if your family doesn’t eat the entire quiche the night before, breakfast is ready!  I have a vast variety of quiche recipes ranging from unique versions – Huevos Rancheros Quiche to seasonal versions – Pumpkin Sage Sausage Quiche to simple versions – Deep Dish Bacon, Ham and Cheese Quiche. 

Two more make ahead recipes that would make a great breakfast are Southwest Corn Bread Muffins and Ham, Caramelized Onions and Gorgonzola Cheese Puff Pastry Cups.

A tip that some of you may do that I do for my family is make hard boiled eggs, peel them, make bacon, plate it, cover with Saran wrap the night before and the next morning I pop it in the microwave for about 15 – 30 seconds, pop a piece of toast in the toaster and a more conventional breakfast is ready in less than 3 minutes!
