Elegant Fall Dinner (Duck Confit Risotto with Butternut Squash and Caramelized Cipollini Onions)

Celebrate the season with this menu featuring all the robust flavors of Fall! The salad screams “Fall is here!” by using most of the pumpkin and pairing it with a dressing that contains Fall spices.  Generally I let my kids decorate the pie pumpkins with markers and we enjoy them as decorations for a few days and then we get to eat them as done in the salad – multi-purpose!  The wine featured pairs very well with the entrée, but I would choose to serve a sweeter type of wine such as a Riesling with the salad.  Try one from my German Riesling Flight or your favorite type of sweeter white wine.
