Greek Style Pizza

It may be tempting to call and order a pizza, but with a little planning you can create this unique version. Try finding this version on your pizza delivery menu! Remember that if you are using Sam’s Club dough ball it will take about 6 hours to thaw and double in size. Also the chicken needs about 4 hours to marinade. These two steps can be done in the morning and you will be set to go to make your pizza. If you have leftover grilled chicken from a previous meal, feel free to use that instead.  Lemon Infused Olive Oil is being used and can be purchased on-line.

Ingredients

Chicken Marinade
2 chicken breasts, skinless and boneless, about 1/2 1bs.
1 tablespoon Lemon Infused Olive Oil or regular olive oil and a lemon
1 tablespoon of Greek seasoning
Pizza
1 Sams club dough ball, thawed and doubled in size (takes about 6 hours) or use your favorite dough
1 small zucchini, thinly sliced (if you have a mandolin, use it)
1 tablespoon of lemon infused olive oil or regular olive oil and lemon juice
A sprinkle of kosher salt
2 tablespoons of a red onion finely diced
2 tablespoons of kalamata olives, pitted and diced
1 container of Halloumi brand cheese, sliced and diced into small pieces or your favorite type of Greek cheese or regular cheese
20 grape tomatoes cut in half lengthwise
Non-stick cooking spray
1/4 cup of pasta flour

Technique

Place dough ball in a large bowl coated with non-stick cooking spray, cover with plastic wrap, thaw and allow to double in size, about 6 hours.

Place the chicken and remaining ingredients into a Ziplock bag. Massage bag to coat the chicken thoroughly and place in refrigerator to marinate for at least 4 hours.

Once chicken has marinated for at least 4 hours, grill over medium high heat until both sides have browned and chicken is thoroughly cooked. Cooking times will vary depending on the type of grill you are using and how thick the chicken is. There should be no pink in the middle. Let sit until warm and slice into cubes. Spray cookie sheet or pizza pan with non-stick cooking spray, coat with pasta flour. Discard any pasta flour that does not stick to the cookie sheet or pizza pan. Gently stretch dough into a circular shape with your hands. Place onto cookie sheet or pizza pan and mold to the edges. Toss zucchini slices in a small mixing bowl with oil and kosher salt until evenly coated. Pour mixture over pizza and gently maneuver slices to evenly create the 1st layer of the pizza. Add the chopped cheese, then remaining ingredients, finishing with the cut grape tomatoes. Bake in a preheated oven at 425 degrees until edges are golden brown.
