This is an extremely easy salad that is not only delicious and refreshing but is good for you! Use a bottled dressing from Brianna, fresh salad, grilled salmon, canned mandarin oranges, packaged nuts and a great dish is on your plate in no time! The amount of ingredients below makes one serving. Adjust ingredient amount to accommodate the number of people serving.
1 – 4 oz. salmon filet
2 cups of mixed greens
1 tablespoon of Brianna’s Home Style Ginger Mandarin Dressing
Half of a 10 oz. can of mandarin oranges drained
1 tablespoon of Sunkist Almond Accents Honey Roasted Flavored Sliced Almonds
Preheat grill or grill pan to medium high. Add salmon skin side down. Grill, covered for about 10 -15 minutes, remove and let rest for 5 minutes. If using a grill pan cover with a large lid. This produced a meat that was done to medium well. Grilling times will vary depending on your grill, the cut of salmon and your preference of doneness. For salad add mixed greens to a medium to large bowl, toss with dressing to coat evenly. Plate and add top with salmon, mandarin oranges nuts. Serve immediately and enjoy!
For lunch try a flavored iced tea or a plain iced tea with lemon wedges or orange wedges. Orange wedges are a great way to make a plain ice tea spectacular! For dinner try Yalumba Viognier (South Australia), McManis Family Vineyards Viognier (California) or Blue Moon Belgian-Style Wheat Ale with orange wedges.
