Maggie’s Fruit Pizza

Let summer burst in your mouth with this refreshing dessert that will keep you coming back for just one more slice! Use summer’s freshest fruits and this will be one of your favorite desserts! The recipe is one that my mother Maggie made for me and when I was older would help her and as I got older I would make it for my friends.  When I moved away after graduation, my Mom sent me the recipe that said “Julie, do you remember making this?”  Of course Mom and now I make it for my boys!  When I have my friends over who have kids I don’t put the fruit on it, but slice each piece and let them make their own dessert using a vast variety of fruit I have set out on the table. 

Ingredients

1 1/2 cups of flour
1/2 cup of powdered sugar
3/4 cup of butter at room temperature
1 – 8 ounce package of cream cheese
1/2 cup of sugar
1 teaspoon of vanilla
Fresh seasonal fruit of your choice

Technique

Using a mixer or your hands combine the first three ingredients together to form a ball. Using your hands, flatten the dough onto a pizza pan or cookie sheet coated with non-stick cooking spray to about ¼ inch thickness. Bake in a pre-heated oven at 350 degrees for 15 minutes or until lightly golden. Allow crust to cool. Using a mixer, blend cream cheese, sugar and vanilla. Make sure you blend long enough that the mixture does not have a “grainy” taste. Spread mixture over cooled crust. Add your favorite fruits and enjoy!
