Salsas are a wonderful way to add great flavor to any meat, seafood, rice or even a side dish. This is a refreshing alternative to the typical tomato based salsa. I have even used it in a tortilla along with grilled pork tenderloin and it was wonderful. Try it with our Grilled Pork Loin Chop.
2 ripe peaches pit removed and finely diced
1 English cucumber, peeled ( does not have to be a perfect peel) and finely diced
2 sprigs of mint stems removed and use the chiffonade technique to cut
1/2 cup of rice wine vinegar
1 teaspoon of kosher salt
Gently combine all ingredients in a large mixing bowl, and refrigerate until ready to serve. Serve the same day you are making it.
