Pomegranate Sparkling Wine Cocktail

Sparkling wine, also known as Champagne, but can only be called Champagne if it comes from the Champagne region of France is a great way to celebrate any occasion. This one is a particular favorite during the holiday season and Valentine’s Day, because of its red color from the juice of the pomegranate and garnished with pomegranate seeds. Makes about 8 glasses as shown.

Ingredients

1 bottle of dry sparkling wine of your choice (don’t get a sweet version, because it will create an overly sweet cocktail)
2 pomegranates seeds removed

Technique

Remove seeds from the pomegranates. Reserve about a 1/3 of a cup of the seeds for garnish. In a blender add the remaining seeds and blend to liquefy. Strain juice with a strainer pushing down on the mixture and discard the pulp. You should have about 1/2 cup of juice. Fill bottom of champagne flutes with about 2 tablespoons of the juice, fill with sparkling wine and garnish with pomegranate seeds. If you want more pomegranate flavor use more juice or adjust the amounts of the juice to your liking. Serve immediately and enjoy!
