Pork Tenderloin with an Adobo Seasoning Rub

This is an easy week night meal that can be morphed into another meal the next night. Try making sandwiches with your favorite BBQ sauce or roll it in a flour tortilla. The seasoning used can be ordered online at Penzeys or MySpiceSage.  Your grocery store will have a different brand, but it is very salty and I do not recommend it.  The seasoning contains the following ingredients; onion, garlic, black pepper, Mexican oregano, cumin and cayenne pepper.

Ingredients

1 package of pork tenderloin about 2 lbs. – this particular pre-packed tenderloin contained 2 tenderloins
2 tablespoons of adobo seasoning
2 tablespoon of olive oil
1 bottle of beer

Technique

Rub tenderloins with adobo seasoning until evenly coated. You have two options for the searing process. If you have a Dutch oven or something similar use it to sear the meat and transfer it directly to the oven. If you do not, use a skillet and transfer to a baking dish with a lid. In a Dutch oven or a large deep skillet heat olive oil over medium heat. Add tenderloins and sear on all sides. Remove seared tenderloins and place on a plate or in a baking dish with a cover. Deglaze the Dutch oven or skillet with the beer to remove any of the pork bits, juices and seasoning. If you are using a Dutch oven place pork back into the Dutch oven. If you are using a skillet, pour contents from skillet over the tenderloins. Cover and place in a preheated oven at 375 degrees for one hour. Remove and let rest for 5 minutes. Slice and serve. Ladle the juice over the sliced pork for the added flavor.
