A very easy side dish that has wonderful flavor paired with the garlic. This side dish pairs very well with most pork dishes.
4 medium sweet potatoes
4 roasted garlic cloves
4 tablespoons of butter
Kosher salt and pepper to taste
Place sweet potatoes on a baking sheet, pierce with a fork and bake in a preheated oven at 400 degrees for about 1 hour or until tender. Baking time will depend on the size of the potato. Cut off a quarter of the top of a whole head of garlic and drizzle with olive oil, place on a baking sheet and bake in a preheated oven at 400 degrees for about 20 minutes. The garlic can be added to the oven at the same time as the potatoes and let sit to cool before adding to sweet potatoes. Allow sweet potatoes to cool slightly. Peal sweet potatoes and place in a large bowl. Squeeze out 4 cloves of garlic and mash with butter. Add more butter or garlic, depending on your taste. Remove any of the hard outer edges of the garlic. Season with salt and pepper to taste.
