Spinach Salad using Leftover Chicken

I often make additional grilled chicken or baked chicken during the week to morph into another quick and delicious meal. Chicken is very versatile and can be mixed up with various ingredients that you may have on hand for a completely different meal. Some other great options for using leftover chicken are our recipes Fusilli Pasta with Pesto and Grilled Chicken, Chicken Salad with a Poppy Seed Dressing or Southwest Chicken Salad. Two kinds of dressings are being used to create a creamy and tangy flavor, but you can mix it up your way with what you have on hand. Ingredient amounts will serve four. Adjusts ingredient amounts to accommodate the amount of leftovers you have.

Ingredients

1 1/2 cups of leftover chicken breast cut into small pieces
1 cup of couscous (Israel or regular) or orzo pasta cooked and chilled
6 oz. of fresh spinach, rinsed, drained and cut using the chiffonade technique
1 English cucumber or regular cucumber peeled and finely diced
3 stalks of celery, cleaned and finely diced
1/2 of a green onion thinly sliced about 2 tablespoons
1/3 cup of Newman’s Own brand Caesar dressing
1/3 cup of Newman’s Own brand Three Cheese Balsamic dressing

Technique

Combine all above ingredients in a large mixing bowl. Toss and serve.
