Tuscan Seasoned Baked Fingerling Potatoes

Potatoes are a humble ingredient that can be jazzed up many different ways with seasoning, herbs, oils and cheeses to name a few. Although fingerling potatoes are being used any type of potato will work. If you can’t find Tuscan Seasoning use Italian seasoning or order it from MySpiceSage or try Tuscan Sunset from Penzeys. Spicewood Food Company Roasted Garlic Olive Oil is being used for an extra boost of flavor without having to peel/smash garlic cloves.  Serves 4.

Ingredients

1 lb. of fingerling or new potatoes scrubbed (Regular potatoes scrubbed and chopped will work too.)
2 1/2 tablespoon of Spicewood Food Roasted Garlic Olive Oil or regular olive oil
1 teaspoon of Tuscan Seasoning or Italian Seasoning
Fresh grated Parmesan or Romano cheese for serving

Technique

Scrub potatoes and place on a baking sheet. Add oil and seasoning and toss to evenly coat potatoes. Evenly arrange potatoes on baking sheets. Bake in preheated oven at 375 degrees for about 45 minutes or until fork tender. Stir half way through the cooking process. Remove and serve family style with fresh grated cheese of your choice.
