Chilled Asparagus with Lemon Infused Olive Oil, Cherry Tomatoes and Fresh Dill

This is an extremely easy make ahead side dish that has a wonderful combination of flavors. If you do not have lemon infused olive oil, use a good quality olive oil and the juice of a lemon. The particular brand of lemon infused olive oil I use can be  ordered on-line at Spicewood Food Company.


1 lb. of asparagus cleaned and tough ends removed
1 cup of cherry tomatoes cut in half
2 tablespoons of lemon infused olive oil or regular olive oil and lemon juice
1 ½ tablespoons of minced fresh dill


Steam asparagus until al dente about 5 minutes remove from steamer and place on a serving plate and drizzle with lemon infused olive oil. Place in fridge to chill. When ready to serve add cherry tomatoes and sprinkle with dill. You may have to add another drizzle of lemon infused olive oil when ready to serve.
