Easy Summer Dinner (Slow Roasted Rack of BBQ Pork Ribs)

This is a menu for a lazy summer day!  For the appetizer, entrée, side dishes and dessert only a few ingredients are used and there is very little work on your part.  There are a couple of options for this menu.  For an alternative appetizer try Grilled Spiced Shrimp.  If you want another side dish try Maggie’s Creamy Potato Salad with Fresh Dill.  Another option to serve as a side instead of the corn is a simple slaw.  Even though the oven temperatures are different for the appetizer and ribs, the appetizer can still go in at that temperature you will just have to cook it a bit longer.  Enjoy a relaxing, but yummy summer dinner!

Corn on the Cob with a Chipotle Chili Pepper Butter Compound (compound butter optional, but highly recommended)

Elegant and Easy Ice Cream Dessert Make it easier by serving the ice cream without the napkins, simply place the liqueurs in their individual bottles on the table and let your guests scoop out their favorite ice cream(s) and drizzle with liqueur if desired.
