Green Beans with Balsamic Caramelized Onions Topped with Gorgonzola Cheese and Bacon

Green beans are a great vegetable that are fun to cook with by using different ingredients to make them more flavorful. As is they are a little bland so this recipe adds a flavor punch to the humble yet versatile green bean. Serves 4

Ingredients

Green Beans
1/2 lb. of green beans washed and tough stems cut off and steamed
Caramelized Onion Reduction
1 small yellow onion, peeled and diced
1 1/2 tablespoons of olive oil
1 tablespoon of brown sugar
1 tablespoon of balsamic vinegar
Garnish
Crumbled gorgonzola cheese
Cooked and crumbled bacon

Technique

Steam green beans for about 5 minutes or until au dente. While green beans are steaming microwave the bacon until crispy and set aside until cool enough to crumble. Make caramelized onion mixture by adding olive oil to a medium sized over medium high heat. Add the onions and sauté until they begin to brown. Add brown sugar and sauté until evenly coated. Add balsamic vinegar, reduce slightly. Stir frequently so it doesn’t burn. Add beans and stir over low heat until warm. Plate and garnish with crumbled gorgonzola cheese and crumbled bacon.
