Mixed Greens with Feta Cheese and Figs in a Sweet Balsamic Vinaigrette

This is an extremely easy side salad for a date night or dinner party. Almost all of the ingredients can prepared ahead of time and all you have to do is toss, top with ingredients and serve. Dried figs are being used, but fresh ones would be great too. Serves 4.

Ingredients

Salad
8 cups of mixed greens
1/2 cup of pecan pieces toasted
1/2 cup of dried figs stem removed and cut into quarters or 4 fresh figs, stem removed and cut into quarters
1/2 cup of crumbled feta cheese
Balsamic Vinaigrette
3 tablespoons of balsamic vinegar
2 tablespoons of honey
1/2 cup of extra virgin olive oil
Dash of Kosher salt
Dash of fresh ground pepper

Technique

Toast the pecans by adding to a non-stick skillet over medium high heat for about a minute. Stir constantly, so you don’t burn them. Remove from pan and set aside. Prepare figs and set aside. Make dressing and set aside. Add more honey for a sweeter dressing. In a large bowl toss salad with dressing, plate and evenly top salad with pecan pieces, figs and feta cheese around salad and serve immediately.
