Summer Dinner al Fresco (Classic Risotto with Crab)

Eating outside on a warm summer night makes dinner special.  Serve this menu highlighting the fresh ingredients of summer, light some candles and you have a perfect date night or dinner party!  Crab is used to top off the risotto, but you can choose to use any type of seafood or leave it out all together.  I have done both in the past and it is great any way you mix it up!  For special occasions I have used lobster and one is perfect for two people.  For a more casual date night try J. Lohr Arroyo Seco Riverstone Chardonnay (California) or for special occasions try Rombauer Vineyards Carneros Chardonnay (California).
