I make a whole chicken at least once a week because it is easy, my entire family loves them and generally I have leftovers for another meal. This version takes on an Asian flare.
Ingredients
1- 1 1/2 pound whole chicken
10 sprigs of cilantro
1/4 cup of sweet chili pepper sauce
1/2 an orange cut into wedges
Non stick spray
Additional sliced oranges and sprigs of cilantro for garnish
Technique
Wash chicken and remove anything from inside of the cavity. Fill cavity with sprigs of cilantro, sweet chili pepper sauce and orange wedges. Place into a large baking dish breast side down coated with non-stick cooking spray. Cover and bake in a preheated oven at 375 degrees for about 2 hours. Remove and place on sliced oranges and garnish with cilantro.

Try Rice with Pineapple and Coconut Milk or Chilled Soba Noodles with Mandarin Oranges.
