A refreshing drink that complements many appetizer or main courses. I make this drink with Caffeine Free Diet Coke or use Coke Zero and it tastes great. However, most of you will probably prefer it made with regular Coke. I also use 2-3 lime wedges. This is my attempt to convince myself that at least I am getting my vitamin C out of it! I have also put ingredient amounts in cups, because that is how I made it and I think that it will be easier for the home cook/mixologist to make.
1/4 cup (2 oz.) of Rum
1 cup (8 oz.) of Coke, Coke Zero or Diet Coke (caffeine free for any of you that don’t like caffeine)
Fresh lime washed and sliced into 2 wedges or more depending on your preference
The amounts above will yield two drinks. In two 8 oz. glasses fill with ice and add rum and Coke. Squeeze the juice of the lime wedge into glasses and smear lime around the edge and garnish with the lime wedge by placing it in the glass or discard.
