This is and easy and quick snack, appetizer or side dish to use all the zucchini from your garden!
Ingredients
1 small zucchini thinly sliced
Non-stick cooking spray
A sprinkle of kosher salt
A light sprinkle of freshly cracked pepper
1/2 cup of packaged mozzarella cheese
Technique
Slice zucchini into thin slices but not as thin as a potato chip. Spray cookie sheet with non-stick spray, place zucchini slices on cookie sheet and spray once again. Sprinkle with kosher salt and fresh cracked pepper. Bake in a preheated oven at 375 degrees for 10 minutes or until the zucchini has changed to a translucent like color and they have shrunk slightly. If you are using a larger zucchini it will take a little longer, about 15 minutes. Top with mozzarella cheese and return to the oven and bake until cheese has browned, about 5 minutes. Remove from oven and place on a serving tray for everyone to enjoy.
