Peach Cobbler

Peaches are a great taste of summer and what a better way to feature them in a cobbler. The filling caramelizes to make a wonderful sauce and pairing with ice cream makes it slam dunk.

Ingredients

Filling
6 cups of ripe peaches, peeled, pitted and sliced
3/4 cup of brown sugar
2 tablespoons of butter melted
2 tablespoons of cornstarch
2 tablespoons of water
1/2 tablespoon of lemon juice
Topping
1/4 cup of granulated sugar
1/4 cup of butter at room temperature
1 cup of flour
1 1/2 teaspoons of baking powder
3/4 cup of milk

Technique

Peel, pit and slice peaches. In a large bowl whisk together all filling ingredients except for the peaches. Add peaches and set aside. The purpose of the cornstarch is that it will act as your thickening agent. Add peaches to the bowl and gently combine. Pour into an 8 inch by 8 inch baking dish.

Make topping by creaming the butter and sugar in a large bowl. Add remaining ingredients and mix until blended, but do not over blend or it will be tough. The dough will have some lumps. Spread dough over the top of peach mixture and bake in a preheated oven at 400 degrees for about 35 minutes. Serve warm as is or with a scoop of vanilla ice cream.
