Baked Chicken Tenders

This is a healthier alternative to chicken nuggets or fried boneless types of chicken on most menus. This is a perfect meal for a Sunday night or a Monday night football game. Make it your way by adding different seasonings to the dry mixture. Round out the meal with Baked Waffle Fries.

Ingredients

Chicken Tenders
8 chicken tenders fat removed
½ cup of fine bread crumbs
¼ cup of parmesan cheese
¼ cup of toasted wheat germ (optional, but is a great source of many vitamins)
2 eggs beaten or ½ cup of Egg Beaters
Condiments
Blue Cheese
Ranch Dressing
BBQ Sauce
Honey
Marinara Sauce
Celery sticks (optional)

Technique

Remove any visible fat from chicken tenders. Mix bread crumbs, cheese and wheat germ in a large shallow bowl and add Egg Beaters to another large shallow bowl. Dip chicken into the egg mixture, then into dry mixture and place on a baking sheet sprayed with non-stick cooking spray or lined with foil. Bake in a preheated oven at 400 degrees for about 15 -20 minutes or until cooked thoroughly. Place on a platter with celery sticks, if using. Serve with condiments on the side.
