This is a healthier alternative to chicken nuggets or fried boneless types of chicken on most menus. This is a perfect meal for a Sunday night or a Monday night football game. Make it your way by adding different seasonings to the dry mixture. Round out the meal with Baked Waffle Fries.
8 chicken tenders fat removed
Â½ cup of fine bread crumbs
Â¼ cup of parmesan cheese
Â¼ cup of toasted wheat germ (optional, but is a great source of many vitamins)
2 eggs beaten or Â½ cup of Egg Beaters
Celery sticks (optional)
Remove any visible fat from chicken tenders. Mix bread crumbs, cheese and wheat germ in a large shallow bowl and add Egg Beaters to another large shallow bowl. Dip chicken into the egg mixture, then into dry mixture and place on a baking sheet sprayed with non-stick cooking spray or lined with foil. Bake in a preheated oven at 400 degreesÂ for about 15 -20 minutes or until cooked thoroughly. Place on a platter with celery sticks, if using. Serve with condiments on the side.
