Chilled Soba Noodles with Mandarin Oranges

Soba noodles generally are served chilled, so this is a great make a-head dish. It is great served with most of our Asian inspired dishes. I am using a blood orange olive oil from Spicewood Food Company and it can be purchased on-line at Spicewood Food Company.

Ingredients

1 – 8 oz. package Japanese soba noodles cooked according to package directions
1/4 cup of blood orange olive oil
1 – 11 oz. can of mandarin oranges do not drain
1/2 cup of green onions washed and sliced
1/3 cup of Sunkist brand Almond Accents Honey Roasted Sliced Almonds

Technique

Cook noodles according to package directions, drain and place in a large serving bowl. Add oil toss and refrigerate for at least an hour or more to chill. Don’t put any of the other ingredients in at this point. When ready to serve or pasta has chilled add mandarin oranges, green onions and almonds. You may need to add more oil if it is sticky.
