Graf v. Schönborn Riesling Kabinett Troken Hallburger Schlossberg Vintage 2007

This particular wine comes from a vineyard that dates back to 1248. Almost 1,000 years of history and knowledge of how to get the best flavor from the region in which the vines and grapes have to deal with very extreme climate changes. It can get quite cold where this wine comes from and over the history of the area, wine crops/grapes can be destroyed from the extreme frigidness.

The wine takes on a crisp minerality with undertones of lime that is utterly amazing. It almost tasted like there was an effervescent but it did not have any bubbles. The wine pairs perfectly with Asian appetizers and New England style crab cakes. Not what you would expect. Some may think that because it is a Riesling that it should be paired with only German style foods, but do not limit yourself. This wine has the ability to cross borders from around the world and will complement the food perfectly.  Look at the elegance and character alone of the bottle and imagine the taste of what is inside. Chill wine to cave temperature 58° Fahrenheit, remove cap, pour into glasses, drink responsibly and enjoy!
