Grains Galore!

Thinking of a big bowl of rice or noodles with cheese? Think again! This is a wonderful blend of grains that can be purchased as a package at Trader Joe’s. However, it can easily be made by using a combination of grains of Israeli style couscous, orzo pasta, dried baby garbanzo beans, dried red bell pepper and red quinoa. Israeli style couscous is the main component of this mix. The color and creaminess you see in the picture comes from the grains themselves and adding turmeric and coconut milk. 

Ingredients

2 tablespoons of olive oil
1 cup of Trader Joe’s Harvest Grains or your own blend as described above
1 -15 oz. can of lite coconut milk
1- 15 oz. can of 99 % fat free chicken broth
1 teaspoon of ground turmeric
Sprinkle of kosher salt
Parsley sprig to garnish

Technique

Heat olive oil in a large deep skillet. Pour grains into oil and saut̩ until slightly brown. Add coconut milk, chicken broth, turmeric and salt. Stir and let simmer over low heat until all liquid is absorbed and mixture is creamy. About 15 Р20 minutes. Garnish with parsley and serve as a side or eat as a snack with baked pita chips.
