With just a few ingredients create this Tuscan delight in the comfort of your own home! Spicewood Food Company is being used and can be purchased on-line.   The reason for using Spicewood Food Company Balsamic Vinegar Aged 18 Years is that it is like a balsamic reduction which is sweet and smooth.  Serves 2. If you have leftovers try Filet Mignon and Arugula Crostini.
Ingredients
Filets
2 – 4-6 oz. fillet mignon
1 tablespoon of Italian seasoning
1/4 cup of Spicewood Food Balsamic Vinegar
2 tablespoons of olive oil
Technique
In a large ziplock bag mix together all the ingredients except for the meat. Add meat, remove air, close and gently massage filets until evenly coated. Pace in refrigerator and marinade for at least 8 hours or overnight if possible. Every so often massage filets and turn bag to allow all sides of filet to be evenly coated with the marinade.
You can choose to broil or grill. I broiled mine by preheating an oven to broil on high and broiling for 20 minutes turning half way through the cooking process. This will result in a meat cooked to medium rare. Increase or decrease cooking times to your liking of doneness. Let meat rest for 5 – 10 minutes before serving. If choosing to grill, heat a grill or grill pan to a medium high heat. Sear each side of filet for about 4 – 5 minutes that will normally yield a meat cooked to medium rare. If you prefer your meat medium well cook longer. Doneness of the filet will depend on the thickness of the filet and the type of grill you are using.  Once grilled to desire doneness, remove and let rest for 5 – 10 minutes before serving.
