A healthy choice for any meal that pairs well with most entrées. Spinach once wilted is deceiving as far as how much you are eating. That’s a good thing. In just a few bites you will have eaten a huge amount of vitamins!
11 oz. of fresh baby spinach, rinsed and drained
2 tablespoons of extra virgin olive oil
2 tablespoons of parmesan cheese
Heat oil in large skillet over medium high heat, add spinach and cover. Wait about 30 seconds. Remove cover, sauté spinach, cover, wait 30 seconds, and keep repeating until all of the spinach has wilted and is a vibrant green color. Remove from skillet, place into a serving bowl and top with parmesan cheese
