A healthy choice for any meal that pairs well with most entrÃ©es. Spinach once wilted is deceiving as far as how much you are eating. Thatâ€™s a good thing. In just a few bites you will have eaten a huge amount of vitamins!
11 oz. of fresh baby spinach, rinsed and drained
2 tablespoons of extra virgin olive oil
2 tablespoons of parmesan cheese
Heat oil in large skillet over medium high heat, add spinach and cover. Wait about 30 seconds. Remove cover, sautÃ© spinach, cover, wait 30 seconds, and keep repeating until all of the spinach has wilted and is a vibrant green color. Remove from skillet, place into a serving bowl and top with parmesan cheese
