A fabulous side dish that goes with most entrÃ©es.Â The trick is to not over cook the spinach.Â Remove at the semi-wilted stage.Â If mixture seems a bit dry add a few sprinkles of water as opposed to more oil, to prevent it from being greasy.
1 – 9 oz. bag of fresh spinach chopped about 8 cups firmly packed
2 large garlic cloves minced or pressed through a garlic press about 1 tablespoon
1 tablespoon of olive oil
Parmesan cheese for garnish
Using a large skillet, add olive oil and sautÃ© garlic over medium heat for about 30 seconds.Â Add spinach and continue to sautÃ© until semi – wilted, about 2 minutes. Â Serve family style or plate and garnish with parmesan cheese.
