Savory Garlic Pepper Baked Potato Wedges

Potatoes are a staple in most homes and served a variety of ways. This is a healthier take on the typical fried version with more flavor. Spicewood Food Company Roasted Garlic Olive Oil  is being used along with Italian Seasoning to jazz up the flavor and a sprinkle of mozzarella cheese adds for some cheesy goodness. You can use any mix of seasonings to add flavor or simply use kosher salt and fresh ground pepper. Any way you dish it up it is sure to be a hit!  Serves 4 – 6.


2 lbs. of potatoes scrubbed and cut into wedges
1/4 cup of Spicewood Food Roasted Garlic Oil
1 tablespoon of Italian Seasoning or garlic powder and fresh ground pepper or use a mix of your favorite seasonings
1/4 cup or more of shredded mozzarella cheese


Scrub the potatoes to remove any dirt, cut into wedges as shown. On a large baking sheet add all ingredients (except for cheese) and toss to evenly coat the potatoes. Evenly arrange potatoes on baking sheets. Bake in a preheated oven at 425 degrees for about 30 minutes or until fork tender and crispy. Flip half way through the cooking process. Remove and place on a serving platter, add mozzarella cheese if desired and serve.
