Baked Buttercup Squash

Some foods are so good they can be done with a few simple ingredients, such as this one. Add a little bit of butter and salt and pepper a great side dish is on the table. Squash pairs perfectly with pork dishes. Be careful when cutting the squash because it is very dense.

Ingredients

1 – 2 1/2 lb. buttercup squash cut in half and seeds and pulp removed
1 tablespoon of butter
Kosher salt and pepper to taste

Technique

Cut squash in half and remove seeds and pulp. Place squash flesh side down in a roasting pan or cake pan and add enough water that a quarter of the squash is covered. Cover with foil and bake at 375 degrees for about 1 hour or until fork tender. Let cool, slightly. Be careful when removing the foil, the steam is hot. Gently remove squash and scoop the flesh out of the squash. Mix squash with butter and kosher salt and pepper to taste.
