Crab Salad Sandwiches

When traveling I have had lobster rolls and they are spectacular, but what about using a more economical ingredient – crab. We had had a crab fest the night before and had left over crab. Okay leftover crab is probably not a usual leftover, but we were lucky enough to have about a cup of it to work with. I just had to make one of our favorite memories from the Northeast – a version of a lobster roll made with crab. We had Dungeness crab, but you can easily substitute any type of cooked crab. Ingredient amounts make one very large sandwich as shown or 2 smaller ones.

Ingredients

1 cup of cooked crab – your choice
3 tablespoons of mayonnaise
2 tablespoons of celery minced
1 tablespoon of green onions minced
1 tablespoon of capers
1 tablespoon of dill weed
1 tablespoon of fresh lemon juice
A dash of kosher salt and fresh ground pepper
Buns or rolls of your choice
Iceberg lettuce (optional)

Technique

Shell and cut the crab into pieces. In a medium bowl mix mayonnaise, celery, onions, capers, dill weed, lemon juice and salt and pepper. Gently fold in crab. Place mixture on bun(s) with lettuce if desired. Enjoy!
