My Mom used to make these frequently for a very easy meal with no clean-up on her part because they are in foil.Â This was big for her since we didnâ€™t have a dishwasher growing up.Â For a side dish packet see Individual Hobo Potato Packets. Also you can jazz these up with various seasonings of your choice like garlic powder, Adobo Seasoning, Italian Seasoning, Herbs de Provence or any of your favorite seasoning.Â Also you can replace the butter with my Chipotle Chili Pepper Butter Compound orÂ Red Wine ShallotÂ Butter Compound. Also add additional vegetables to your liking just make sure they have the same cooking times like red bell peppers.Â For meatballs you can jazz them up with the same spice you are using for the potatoes or even add pesto to the meatballs. Packet shown serves 1.Â Ingredient amounts will serve 4.
1 lb. of hamburger rolled into meatballs
8 small to medium sized potatoes peeled and cut into Â½â€ slices or leave peel on and scrub
Sliced onions (optional)
2 tablespoons of butter (1/2 of a tablespoon per packet)
A dash of kosher salt and pepper
Place about 16 inches of foil on your counter and spray with Pam.Â Peel and slice potatoes or leave peel on.Â Try to slice into uniform slice so they cook evenly.Â Also donâ€™t cut to thin or they will burn. Roll hamburger into meatballs and add to packets. You can choose to add as many as you like.Â Add onions if using and butter or add any of the mentioned options above.Â Sprinkle with a dash of salt and pepper and wrap by folding side ends over and then fold bottom and top ends so they meet in the middle. Â Repeat with remaining 3 packets.Â Place on a baking sheet and bake in a preheated oven at 375 degrees for about 30 minutes or until fork tender.Â Be careful when opening packets because hot steam will be released.
