Jicama and Green Apple Slaw

The combination of ingredients is Latina in flavor, but is not spicy. The apple complements the ingredients with a great sour and somewhat sweet flavor and both ingredients have a great crunch! The slaw can be served as a side dish or add it to a tortilla with grilled meat, chicken or fish instead of the usual cabbage or lettuce slaw.

Ingredients

1/2 of a large jicama peeled and julienned, about 1 1/2 cups
1 green apple peeled and julienned, about 1 cup
5 sprigs of cilantro chopped, stems removed
1/2 teaspoon of chili powder
1/2 teaspoon of kosher salt
Juice of one lime

Technique

Peel and julienne both the apple and the jicama. Place in a small mixing bowl and add remaining ingredients. Toss and chill for about an hour. Serve as a side dish, as a topping for your grilled entrée or in a tortilla with your favorite protein.
