A fabulous and healthy side dish that goes with most entrées. Kale is like spinach in that it wilts down to a fraction of its size as you can see from the small container displayed and 8 cups were cooked. However it has a more robust texture and flavor than spinach. Serves 2.
Ingredients
1 bunch of kale, washed, drained, stems removed chopped about 8 cups firmly packed
2 tablespoons of olive oil
1/4 cup of shallots minced
2 cloves of garlic crushed through a garlic press
Fresh grated parmesan cheese for garnish
Technique
Using a large skillet, add olive oil and sauté shallots over medium heat for until slightly brown. Add garlic and kale and sauté for about 2 minutes or until kale has wilted. Serve family style and garnish with parmesan cheese.
