Sugar Snap Pea Shoot and Blossom Salad with a Kiwi Lime Vinaigrette

Elegant and easy! This salad has “wow” factor and was made in minutes, with a little help from my children who picked the shoots and blossoms. Sugar snap pea shoots have a delicate light flavor and texture that your ordinary greens don’t have. Sugar snap peas germinate quickly, which will allow you to create this salad within weeks of planting the seeds. If the pea shoots are ready during the week use them! Don’t wait for the weekend to create this spectacular salad that is very easy to make. The blossoms are on the sugar snap pea shoots and will eventually become your sugar snap peas. Don’t worry this is like pruning them and they will come back to produce sugar snap peas.

Ingredients

1 kiwi, peeled
1 tablespoon of olive oil
1 tablespoon of honey
Juice of 1/2 of a lime about 2 tablespoons
5 sprigs of cilantro, stems removed
A pinch of kosher salt
4 handfuls of pea shoots, about 4 cups
15 pea shoot blossoms

Technique

Peel kiwi and place into a magic bullet or blender with olive oil, honey, lime, cilantro, and salt. Blend until smooth and toss with pea shoots and pea blossoms.
