This is a perfect side dish for any main entrÃ©e. It can be made simple by slicing the carrots or for an elegant setting use whole carrots with two to three inches of their tops still attached as shown.
8 medium sized carrots, cut the top off so 2 inches of the tops remain, peel if desired, for the simple version, dice into 1 â€“ 2 inch thick slices
1/4 cup of packed brown sugar
2 tablespoons of butter
1 1/2 cups of water
Evenly spread carrots in an oven proof casserole dish. Cut the butter into 4 quarters and spread throughout the casserole dish. Add the remaining ingredients. Cover and bake in a preheated oven at 375 degrees for about 45 minutes or until tender when pierced with a fork. Cooking time for sliced carrots will be slightly shorter.
