Fried rice is a traditional side dish to any Asian entrée you would order at a restaurant. It is very easy to make and is a nice complement to any of my Asian dishes or as a meal by itself. With a few steps you can have a taste of a favorite Asian side dish in your own home.
Ingredients
1st Step
2 tablespoons of toasted sesame oil
2 celery stalks cleaned and diced
1 cup of carrots cleaned and chopped
1 cup of rice not minute
2 – 15 oz. cans of 99% lite chicken broth
1 tablespoon of soy sauce
2nd Step
2 tablespoons of sesame oil
2 eggs
1 green onion thinly sliced
1 tablespoon of soy sauce
Technique
In a large deep skillet, heat sesame oil. Add celery, carrots and rice and sauté until rice begins to change color. Add broth and soy sauce and let simmer until liquid is absorbed. Remove and set aside in a large mixing bowl. Heat the additional sesame oil in a deep skillet add eggs and fry as you normally would fry an egg. Flip eggs and add rice from bowl. Mix vigorously to help evenly distribute egg and to help break up throughout rice mixture. Add green onions and soy sauce and again mix until all are evenly distributed. Serve on a large dish or bowl or a decorative serving dish or bowl. Garnish with additional thinly sliced green onions if desired.
