Oatmeal raisin cookies are a moist and a yummy cookie that actually has â€œsomeâ€ nutritional value or so we can keep telling ourselves that! They are my favorite type of cookie and this recipe is my personal favorite.Â This is my mother Maggieâ€™s recipe and is dedicated to her memory.
1 cup of butter at room temperature
1 cup of granulated sugar
1 cup of packed brown sugar
1 teaspoon of vanilla
2 cups of oatmeal
2 1/2 cups of flour
1 teaspoon of baking soda
Dash of salt
1 cup of raisins or more if desired
In a large mixing bowl, cream butter and sugars using a mixer. Fully incorporate eggs one at a time. Add vanilla and incorporate. Slowly add dry ingredients. Fold in raisins. Spoon drop (about the size of a golf ball) onto a cookie sheet sprayed with non-stick cooking spray. Bake in a preheated oven at 375 degrees for about 10-15 minutes or until lightly golden. Cooking time will depend on the size of cookie.
