Oatmeal Raisin Cookies

Oatmeal raisin cookies are a moist and a yummy cookie that actually has “some” nutritional value or so we can keep telling ourselves that! They are my favorite type of cookie and this recipe is my personal favorite.  This is my mother Maggie’s recipe and is dedicated to her memory.

Ingredients

1 cup of butter at room temperature
1 cup of granulated sugar
1 cup of packed brown sugar
2 eggs
1 teaspoon of vanilla
2 cups of oatmeal
2 1/2 cups of flour
1 teaspoon of baking soda
Dash of salt
1 cup of raisins or more if desired

Technique

In a large mixing bowl, cream butter and sugars using a mixer. Fully incorporate eggs one at a time. Add vanilla and incorporate. Slowly add dry ingredients. Fold in raisins. Spoon drop (about the size of a golf ball) onto a cookie sheet sprayed with non-stick cooking spray. Bake in a preheated oven at 375 degrees for about 10-15 minutes or until lightly golden. Cooking time will depend on the size of cookie.
