Orange Bell Pepper Rice

A colorful and easy side dish to make. Substitute yellow or red peppers if you like. Or make a combination of all of them. This is a perfect compliment to the “not your typical chicken cordon blue” as shown below


2 tablespoons of olive oil
1/2 teaspoon of kosher salt
1 medium onion diced
1 orange bell pepper diced
1 cup of Uncle Ben’s brand long grain rice or any other long grain rice
2 cans of 99% fat free chicken broth


In a deep frying pan or skillet, add olive oil over medium high heat. Add onions and peppers. Cook until tender, stirring often. Add rice and stir until a little light brown. Add chicken broth and salt. Stir, and then cover with foil or lid. Reduce heat to low and simmer for 15-20 minutes. It is ready once all liquid is absorbed.
