A wonderful side dish or a great choice for a light lunch or dinner. Couscous is very versatile in that you add different ingredients toÂ yourÂ liking and it can be served chilled or warm.Â Â Lemon Infused Extra Virgin Olive OilÂ can be purchased on-line at Spicewood Food Company.
Â½ cup of toasted pine nuts
1 cup of whole wheat organic couscous
1 cup of finely chopped parsley
Â½ cup of Lemon Infused Extra VirginÂ Olive Oil
1 cup of finely chopped cucumbers
1 cup of grape tomatoes cut in half
1 teaspoon of kosher salt
In small skillet over medium heat, toast pine nuts until golden brown. Stirring often. Set aside. Cook couscous per package direction. Once all liquid is absorbed, transfer couscous to medium sized mixing bowl and flake with a fork. Add remaining ingredients and gently combine. You may need to use the fork to flake the couscous after combining ingredients. Serve immediately or place in refrigerator until ready to serve.
